Freezer meals round 2

A couple weeks ago I shared my first experience with making freezer meals (you can find that here). That was a LONG day, but it was worth all the work because those meals lasted my family for two weeks. It was a life changer for me, and something I now plan on doing every two weeks.

Last week I decided on some new recipes and went grocery shopping for all the ingredients. Friday I got to work putting everything together.

My freezer is now stocked with enough meals for more than two weeks!

Right now we have a standard side by side freezer which is rather small in my opinion. I would love to have a freezer chest as well, but my husband and I are stumped as to where to put one. So for now I'm somewhat limited in how many meals I can make at a time.

Here are the meals I made for this round.

Teriyaki chicken

Spaghizza (spaghetti pizza)

I made mine without the spinach.

I made two of each recipe and almost thirty of the breakfast burritos. I also made three servings of hamburgers that we can easily throw on the grill for dinner.

It has been such a relief the last two weeks not having to worry about rushing to put dinner together. Plus my family is getting to try some new recipes.

Have a great day!

Freezer meals to the rescue

Welcome back! Today I'm sharing something different...no crafting or decorating projects! Today I'm talking food!

I'll let you in on a little secret...I dislike cooking A LOT! It's just not something I enjoy doing, which isn't a good thing since I'm a stay at home mom and housewife. I do 100% of the grocery shopping and meal planning at our house and about 95% of the cooking. My husband likes cooking and is a great chef but unfortunately he has to work full time (bummer). I also babysit a few days a week which keeps me busy.

To keep things less stressful at dinnertime I decided to try my hand at freezer meals.

First I did my research (on pinterest of course). I pinned lot's of freezer meal recipes and read all of the instructions. I stocked up on foil baking pans (from the dollar store) and large freezer bags. I decided to start off with six different recipes and doubled each of them to make twelve meals. I made a detailed shopping list and hit the grocery store.

Friday was my cooking day since I wasn't babysitting and all the kids were at school. I was actually excited to get started because I knew how much time this was going to save me in the following weeks. I started my cooking marathon at 7:30 and finished at 4:30. I was exhausted and my kitchen was wiped out.

Here is a glimpse into my day...

Here are the meals I made.

pepperoni lasagna
I've had this recipe for years and it is our favorite lasagna.

Ingredients:
1 1/2 lbs. ground beef
1 small onion
2 1/2 cups water
1 can (8oz.) tomato sauce
1 can (6oz.) tomato paste
1 teaspoon beef bouillon granules
1 tablespoon dried parsley flakes
2 tsp Italian seasoning
1 tsp salt
1/4 tsp garlic salt
2 eggs
1 1/2 cups cottage cheese
1/2 cup sour cream
8 lasagna noodles cooked
1 package (3.5 oz) pepperoni
2 cups mozzarella cheese

Instructions:
cook beef and onion then drain
add water, tomato sauce, tomato paste, bouillon and seasoning bring to boil reduce heat and simmer for 30 min.
in small bowl combine eggs, cottage cheese and sour cream
spread 1/2 cup meat sauce into greased 13x9 baking dish
layer with 4 noodles, cottage cheese mixture and pepperoni
top with remaining noodles and meat sauce
sprinkle with mozzarella cheese
cover and bake at 350 for 35 min.
uncover bake 10 min longer
let stand 15 min.

Even though it was a long long day, it was worth all the work!
Dinner time this week has been so easy and no frozen pizzas or chicken nuggets!

I plan on making this a bi-weekly event. I've even started planning out my next round of freezer meals.

Have you ever made freezer meals? Do you have one you would recommend? I would love to hear from you.

Pinterest challenge...birthday yummies

Yep, I am officially the mother of a teen daughter! Why do our children have to grow up so quickly? I miss the days when I had three little one's running around the house. Now I have two teenagers and a ten year old.

Saturday was my daughter's thirteenth birthday and we celebrated with family and friends at a local park. After the party we took some of the older kids paddle boating!

My husband, daughter and myself at the party!

For the party I decided to keep the food simple and just grab some pizza's! I also wanted to try making just a few new items so I picked some recipes off Pinterest that I've been wanting to try.

I have a link underneath each picture if you would like the recipe. These were not my original creations!

My daughter loves hummus so I knew I had to try these . They were so easy to make and super yummy!

Two words...SUPER SWEET!

I was a little disappointed how mine turned out, not nearly as bright and colorful as the original. However, my youngest daughter and niece had fun helping me mix all the batter colors and the birthday girl loved them!

Thanks for stopping by!

Pinterest challenge Texas Roadhouse butter

I did it again!

Another Pinterest challenge. Whoo hoo!

With the help of my lovely kitchen assistant we whipped up a batch of Texas Roadhouse butter.

Yummy!

Originally pinned via FLY THROUGH OUR WINDOW.  This recipe was super easy to make. My nine year old daughter basically made this on her own.

Start by whipping two sticks of butter {room temp}.
Then add in 1 cup powdered sugar
1 cup honey
and 2 teaspoons of ground cinnamon.

Just mix it all together and your done!

Our family did enjoy this, but we all agreed the cinnamon was a little too strong. If I make this again I would only add 1 teaspoon of cinnamon {can always add in more later}.

Have a great day!
